Lucky Spinach Gnocchi
A festive, Irish-inspired dish featuring Ohio City Pasta's Spinach Gnocchi, blending classic Irish flavors with a gourmet twist.
Ingredients

- 5 lbs Ohio City Pasta Spinach Gnocchi
- 8 oz Irish butter (such as Kerrygold)
- 1.5 lbs green cabbage, thinly sliced
- 1 lb leeks, white and light green parts only, thinly sliced
- 1.5 lbs Yukon Gold potatoes, small dice
- 1 qt heavy cream
- 2 tbsp whole grain mustard
- 1 tbsp kosher salt (adjust to taste)
- 2 tsp black pepper, freshly ground
- 1.5 cups aged Irish cheddar, shredded
- 1 cup crispy pancetta or bacon, crumbled (optional)
- 1/2 cup fresh chives, finely chopped
- 1/2 cup fresh parsley, chopped

- 8 oz green cabbage, thinly sliced
- 6 oz leeks, white and light green parts only, thinly sliced
- 8 oz Yukon Gold potatoes, small dice
- 1 cup heavy cream
- 2 tsp whole grain mustard
- 1 tsp kosher salt (adjust to taste)
- ½ tsp black pepper, freshly ground
- ½ cup aged Irish cheddar, shredded
- ¼ cup crispy pancetta or bacon, crumbled (optional)
- 2 tbsp fresh chives, finely chopped
- 2 tbsp fresh parsley, chopped
Instructions
- Prepare the Vegetables
- In a large sauté pan over medium heat, melt 6 oz butter.
- Add leeks and cabbage, sautéing until softened (about 8-10 minutes).
- Add diced potatoes, season with salt & pepper, and cook until tender (10-12 minutes).
- Make the Cream Sauce
- Lower heat and add heavy cream and whole grain mustard.
- Simmer for 5 minutes, stirring occasionally.
- Remove from heat and stir in shredded Irish cheddar until smooth.
- Cook the Gnocchi
- Bring a large pot of salted water to a boil.
- Add Ohio City Pasta Spinach Gnocchi and cook until they float (about 2-3 minutes).
- Remove with a slotted spoon and transfer to the pan with the creamy cabbage mixture.
- Finish the Dish
- Toss the gnocchi in the sauce to coat.
- If using, add crispy pancetta for extra flavor.
- Adjust seasoning with salt and pepper as needed.
- Plate & Garnish
- Divide into serving bowls.
- Drizzle with remaining 2 oz melted butter.
- Sprinkle with chives and parsley for a fresh finish.
Serve with a warm, crusty Irish soda bread or a pint of Guinness for the ultimate St. Patrick’s Day special.
