Spring Sweet Pea Ravioli with Lemon Dill Butter
This seasonal ravioli features the light flavor of sweet peas and a twist of lemon blended with ricotta and parmesan cheeses all wrapped in a delicate basil pasta. Pair with our Lemon Dill Butter or follow the recipe below.
Ingredients
- 1 pack (12 ct) Ohio City Pasta Sweet Pea Ravioli (Available for a limited time at our West Side Market Stand and other select retailers.)
- Parmesan cheese
- Lemon Dill Butter (Available for a limited time ONLY at our West Side Market Stand or follow the recipe below.)
- 3 tbsp salted butter
- 1 clove garlic, minced
- Zest of 1 lemon
- 2 tbsp lemon juice
- 2 tbsp chopped fresh dill (optional)
- Salt & freshly ground black pepper to taste
Instructions
- Bring a large pot of water to a rolling boil. Add ravioli and cook for 6 minutes, or until they float. Reserve ¼ cup of pasta water, then drain.
- In a large skillet over medium heat, melt butter. Add garlic and sauté for 30 seconds until fragrant.
- Stir in lemon zest and juice, then add the drained ravioli. Toss gently to coat. If needed, add reserved pasta water to create a light sauce.
- Sprinkle with Parmesan cheese and season with salt and pepper to taste.
- Garnish with fresh dill, if using. Serve immediately and enjoy!
Serving Suggestion: Serve with a crisp white wine and a side salad for a fresh, flavorful meal.
